Cheese: the “secret weapon” of the Middle Ages

“How can anyone govern a nation that has 246 different kinds of cheese?” – burst out Charles de Gaulle once in the 1960s. However, the French head of state was wrong; the types of cheese existing throughout the world are more than twice the number he mentioned. Their number in medieval France – similar to Italy – grew astonishingly thanks to the development of dairy products.
